Eggs ala Brian

2 eggs

2 tablespoons olive oil

heaping handfull of organic baby spinach

3 to 4 medium mushrooms

 2 tablespoons salsa

A few dashes of your favorite hot sauce

Heat olive oil in saute pan. Dice mushrooms and saute a few minutes. Add spinach – cook until spinach reduces (becomes dark green). Scramble eggs and add to mushroom and spinach. Cook until eggs are done and fold in half (like an omelette).  Place on plate, spread salsa on top and hit with hot sauce…..BAM.
