Quick & Easy Beef Stroganoff

This Beef Stroganoff recipe from Jewel is not only easy, but nutritious.

Q:  How can you make over beef stroganoff?

A:  Beef stroganoff can be a balanced meal with veggies built in!  Use 90% or leaner ground beef to remove some calories and fat, and use light versions of ingredients like sour cream.   Sometimes, fat free versions have more sodium and/or sugar than the light version, so light can be just right.

Quick & Easy Beef Stroganoff

Amount:   6 servings

 

 

Ingredients:

½ (16 ounce) package Essential Everyday™ Extra Wide Egg Noodles

1½ pounds lean ground beef

1 medium onion, chopped

1 (8 ounce) package sliced button mushrooms

1 (14.5 ounce) can reduced sodium fat free beef broth

1 (10.5 ounce) can 98% fat free cream of mushroom soup

1 (1.5 ounce) packet slow cooker beef stroganoff sauce mix

½ cup light sour cream

 

 

Directions:

  1. Prepare noodles according to package directions; drain.
  2. Meanwhile, in large skillet, over medium heat, cook and crumble beef, mushrooms and onions until beef is no longer pink; drain.
  3. Add in broth, soup and sauce mix.  Bring to a boil; reduce heat and simmer 5 minutes.  Remove from heat; stir in sour cream and cooked noodles.
